Automatic Crop Farm (Wheat / Carrot / Potato)

There are really two different ways to automate a crop farm, and which one's right depends on whether you want something low-maintenance or something with maximum yield. A farmer villager will automatically harvest and replant any farmland in its range once it's got a composter job site. You build the farmland and water, the villager does the actual work, hoppers catch the drops underneath.
Setting this up means placing a composter, waiting for an unemployed villager to claim it (or walking one over), and making sure the farmland is within range with water sources spaced so every tilled block sits within 4 blocks of one. Give the villager a bed too, or it'll wander off looking for one and abandon your farm.
The other option is a fully redstone-driven flush: crops grow on farmland, and at intervals a piston pushes a water source across the whole field. Water breaks fully grown crops instantly and washes the drops into a collection channel. Replanting isn't automatic here, so flush designs usually pair with some way to redistribute seeds, or you just accept occasional manual reseeding.
The villager method wins on simplicity and needs no replanting, but it's throttled by how fast one villager can work through however much farmland it's assigned. Adding more crops doesn't help unless you add more villagers too, each needing its own bed and job site. The flush method scales with field size and gives you exact control over harvest timing, at the cost of a genuinely more involved build.
Either way, a working crop farm takes food and breeding management almost entirely off your plate. Wheat breeds cows and sheep, carrots and potatoes double as food and breeding items for pigs and villagers, and any surplus becomes one of the more reliable early emerald incomes through farmer trades.
